Chef's tips
- Soaking the almonds beforehand, even briefly, helps the blender break them down into a smoother shake.
- Choose soft, moist dates such as medjool for the best natural sweetness and easiest blending.
- This shake makes a substantial, energising breakfast or afternoon pick-me-up on its own.
Frequently asked questions
Can I make this dairy-free?
Yes, almond milk or oat milk both work well in place of dairy milk, keeping the drink naturally sweet and creamy.
Do I need to peel the almonds?
Blanched, peeled almonds give the smoothest texture; skin-on almonds work too but leave tiny flecks in the finished shake.
