Almond & Date Shake

Ingredients

  • 6 soft pitted dates
  • 40 g blanched almonds (soaked if possible)
  • 400 ml cold milk
  • 1/2 tsp ground cinnamon
  • A few ice cubes

Method

  1. 1

    Soak if needed

If the almonds are not already soft, soak them in warm water for 20 minutes and drain.

  2. 2

    Blend

Blend the dates, almonds, milk, cinnamon and ice together until completely smooth and thick.

  3. 3

    Adjust

Add a little more milk if the shake is too thick to pour easily.

  4. 4

    Serve

Pour into glasses and serve immediately.

Chef's tips

  • Soaking the almonds beforehand, even briefly, helps the blender break them down into a smoother shake.
  • Choose soft, moist dates such as medjool for the best natural sweetness and easiest blending.
  • This shake makes a substantial, energising breakfast or afternoon pick-me-up on its own.

Frequently asked questions

Can I make this dairy-free?

Yes, almond milk or oat milk both work well in place of dairy milk, keeping the drink naturally sweet and creamy.

Do I need to peel the almonds?

Blanched, peeled almonds give the smoothest texture; skin-on almonds work too but leave tiny flecks in the finished shake.
