Tadfi (Atlas Slow-Braised Lamb Tagine)

Tadfi is the celebratory lamb tagine of Amazigh households in the central High Atlas — bone-in lamb rubbed with garlic, cumin and paprika, then braised for hours in earthenware with just onions and its own fat until the meat shreds and a dark, glossy sauce forms. It is deliberately plain and meat-forward, the dish a family cooks when a guest arrives.

Tadfi (Atlas Slow-Braised Lamb Tagine)

Ingredients

  • 1.2 kg bone-in lamb shoulder, cut into large pieces
  • 3 onions, thinly sliced
  • 5 garlic cloves, crushed
  • 2 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/2 tsp ground ginger
  • 4 tbsp olive oil or a knob of smen
  • 1 cinnamon stick
  • Salt and black pepper
  • Fresh coriander, to finish

Method

    Season the lamb

    Rub the lamb pieces with the crushed garlic, cumin, paprika, ginger, salt and pepper and leave 20 minutes to take on the spices.

    Sweat the onions

    Warm the oil or smen in the tagine, add the sliced onions and cinnamon stick and cook gently until the onions slump and turn golden.

    Settle the meat

    Nestle the lamb into the onions, turning once to coat, then add about 300 ml water — just enough to come a third of the way up.

    Braise long

    Cover and cook on the lowest flame for around two hours, turning the meat two or three times, until it is completely tender and the onions have melted into sauce.

    Reduce and serve

    Uncover for the last 15 minutes to reduce the sauce to a glossy coating, scatter with coriander and serve with bread to scoop it up.

Chef's tips

  • Fattier cuts like shoulder and neck are traditional — the rendered fat is what gives tadfi its richness, so don't trim it all away.
  • Low and slow is the whole point; a hard boil toughens the lamb before it has time to become tender.
  • Top up with only small splashes of hot water if it dries, keeping the sauce concentrated.

Frequently asked questions

Why are there no vegetables in tadfi?

It is a meat-celebration dish; the focus is entirely on tender lamb and a deep onion sauce. Vegetables are served alongside as a separate salad or bread.

Can I use a slow cooker?

Yes. Brown the onions first, then cook everything on low for 6–7 hours. Reduce the sauce on the hob at the end if it is too thin.
