Sboua Chicken with Fenugreek (Naming-Day Dish)
On the sboua, the seventh day after a birth when a baby is named, families cook nourishing dishes for the new mother, and this saffron chicken braised with fenugreek seeds (helba) is a classic — the slightly bitter, maple-scented seeds are prized for restoring strength. Served over bread or steamed pasta with the rich, golden sauce, it is comfort with a purpose.

Ingredients
- 1 chicken, jointed into pieces
- 3 onions, grated
- 2 tbsp fenugreek seeds (helba)
- Generous pinch of saffron, bloomed
- 1 tsp ground ginger
- 1/2 tsp turmeric
- 4 tbsp olive oil or smen
- 1 cinnamon stick
- Salt and black pepper
- Fresh coriander, to finish

Soak the fenugreek
Rinse and soak the fenugreek seeds in warm water for 30 minutes, then drain to soften and reduce their bitterness.

Marinate the chicken
Rub the chicken with grated onion, saffron, ginger, turmeric, salt and pepper.

Braise
Warm the fat in a tagine, add the chicken, marinade, drained fenugreek, cinnamon and 300 ml water, cover and cook gently for about 50 minutes.

Reduce
Uncover and reduce the sauce until thick and golden and the fenugreek is soft and tender.

Serve
Scatter with coriander and serve over bread, trid or steamed pasta with plenty of sauce.

- Soaking the fenugreek first is important; raw seeds are aggressively bitter and can overwhelm the dish.
- The seeds should end up soft and almost creamy — if still firm, braise a little longer with extra water.
