Moroccan Mezze Grain Bowl

A build-your-own bowl that gathers a spread of Moroccan small plates over grains — herbed bulgur or couscous topped with zaalouk-style aubergine, carrot salad, hummus, olives, preserved lemon and a soft egg. Ingredients

  • 250 g bulgur or couscous
  • 1 aubergine, diced and roasted
  • 3 carrots, grated with cumin, lemon and oil
  • 6 tbsp hummus
  • Handful of olives
  • 1/2 preserved lemon, sliced
  • 4 eggs, soft-boiled
  • Small bunch parsley and coriander, chopped
  • 4 tbsp olive oil
  • Salt, cumin and paprika

Method

    Cook the grains

    Cook the bulgur or steam the couscous, then fold through olive oil, herbs, salt and a little cumin.

    Roast the aubergine

    Roast the diced aubergine with oil, cumin and paprika until soft and golden.

    Dress the carrots

    Toss the grated carrot with cumin, lemon juice, oil and salt for a quick carrot salad.

    Soft-boil the eggs

    Boil the eggs for 6–7 minutes, then cool, peel and halve.

    Assemble

    Spoon the grains into bowls and arrange the aubergine, carrot salad, hummus, olives, preserved lemon and eggs in sections on top.
