Chocolate & Orange Blossom Mousse

Chocolate & Orange Blossom Mousse

Ingredients

  • 150 g dark chocolate
  • 3 eggs, separated
  • 30 g sugar
  • 1 tbsp orange-flower water
  • 1/4 tsp cinnamon
  • Pinch of salt
  • Candied orange peel, to garnish
  • 2 tbsp toasted almonds, chopped

Method

    Melt chocolate

    Melt the chocolate gently over simmering water or in short bursts in the microwave, then cool slightly.

    Add yolks

    Beat in the egg yolks, orange-flower water and cinnamon.

    Whisk whites

    Whisk the egg whites with the salt to soft peaks, then whisk in the sugar to firm, glossy peaks.

    Fold

    Fold the whites into the chocolate in thirds, keeping the mixture airy.

    Chill

    Spoon into glasses and refrigerate at least 3 hours until set.

    Top with candied orange peel and toasted almonds.
