Hand-Rolled Couscous from Scratch
Before boxed couscous became common, Moroccan women hand-rolled semolina and flour with water into tiny pellets, a slow, communal technique still practiced in rural households and taught in traditional cooking classes.

Ingredients
- 500 g coarse semolina
- 100 g flour
- 300–350 ml cold salted water
- 2 tbsp olive oil

Spread the semolina
Spread the semolina and flour in a large, wide shallow bowl (a gsaa if you have one).

Add water gradually
Sprinkle small amounts of salted water over the grain while rubbing and rolling it between your palms in circular motions, working continuously.

Sieve
Pass the rolled grain through a coarse sieve, returning any large clumps to the bowl to be rolled again with a little more water.

Repeat
Continue rolling, sieving and re-rolling until all the semolina has formed small, even pellets, about 30–40 minutes of work.

Dry
Spread the finished couscous out on a cloth to dry slightly for an hour before steaming.

Steam
Steam the hand-rolled couscous over broth or salted water in two or three passes, raking with oiled hands between each, until tender.

- Add water in small increments — too much liquid at once turns the semolina into a paste rather than pellets.
- This is traditionally a two-person or communal task; expect it to take real time and practice to get an even grain size.
