Merzouga Madfouna Cooking Class - the Sahara's Stuffed Bread
At the edge of the Erg Chebbi dunes, learn to make madfouna, the stuffed Saharan bread often called Berber pizza. Knead, fill and bake it the desert way, then eat it with mint tea as the sand turns gold.
Madfouna - the name means buried - is the signature dish of the Tafilalet desert around Merzouga and Rissani. It is a large, round, flatbread stuffed with spiced minced meat or vegetables, onions, herbs, almonds and spices, sealed and traditionally baked buried under hot sand and embers. This class teaches you to make it in a genuine desert setting at the foot of the great Erg Chebbi dunes.
You mix and knead the dough by hand, prepare the filling - typically minced lamb or beef with onion, parsley, cumin, paprika and almonds, or an all-vegetable version - and learn to roll, fill and seal the bread so it cooks evenly without bursting. The host shows the traditional baking under embers or in a wood oven, and explains how nomadic and oasis families of the Tafilalet have made this hearty, portable food for generations.
The setting is the whole point. You cook and eat at the sand's edge, with the dunes rising behind and mint tea poured from height, and learn how desert life - the dates, the bread, the hospitality of tea - shapes what people eat here. Madfouna is warming, generous and unlike anything in the coastal or imperial cities, and you leave able to bake this Saharan speciality at home.

Frequently asked questions
What is madfouna?
A round stuffed bread of the Tafilalet desert - dough filled with spiced meat or vegetables, onion, herbs and almonds, then baked, traditionally buried under hot sand and embers. It is often called Berber pizza.
Is there a vegetarian version?
Yes. A vegetable and almond filling makes an excellent meat-free madfouna. Tell us when you book.
Do you really bake it in the sand?
The traditional method buries the sealed bread under hot sand and embers; some classes use a wood oven for reliability. The host explains and shows the authentic technique either way.
