The Tafilalet, the great date oasis that Merzouga sits on the edge of, has fed desert travellers for a thousand years on three staples: bread, dates and tea, built up into a generous feast when there is a guest to honour. This desert dinner recreates that hospitality at the foot of the Erg Chebbi dunes, a slow evening meal that shows how the Sahara eats.
The table is built around what the oasis and the desert kitchen provide: a slow-cooked tagine - often lamb with prunes or vegetables - fresh bread baked over embers, Moroccan salads, and above all the dates for which the Tafilalet is famous, including the prized Mejhoul variety that this region gave the world. Mint tea, poured from height, runs through the whole meal, and the pace is unhurried, the way desert eating always is.
